What is Authentic Kombucha?

Kombucha is believed to have originated in China thousands of years ago—legend has it that a jug of tea was left out and got a bit funky! Today, authentic kombucha is a fermented, live, unfiltered, and unpasteurised living tea.

At Blighty Booch, we brew from our purpose-built Innovation Units in the ancient walled town of Conwy, Wales. "Morfa" means beach in Cymru. We proudly bring together the best of both worlds: premium organic Chinese tea (selected for its naturally high L-theanine levels) and pure Welsh water. It is a true meeting of two ancient dragons.

The rise in popularity of fermented products is driven by consumers keen to support their wellness naturally. To ensure we are at the forefront of this movement, Blighty Booch is collaborating with researchers at AberInnovation at Aberystwyth University.

Using high-resolution metabolomics, researchers are actively studying the metabolism and excretion kinetics of our kombucha in humans. As modern Western "sterile" diets are increasingly linked to a lack of microbiome diversity, existing scientific literature (such as Dufresne et al., 2000) has highlighted the importance of pre-and-probiotic-rich fermented foods. Our ongoing university research aims to further validate how these functional foods can support the gut-brain axis and overall well-being.

What is a SCOBY? SCOBY is an acronym for Symbiotic Culture Of Bacteria and Yeast. It is the living, edible mat of bacterial cellulose that safely transforms our sweet tea into tangy, naturally fizzy kombucha.

How much kombucha should I drink? Everyone's microbiome is different, and it is a popular, healthy substitute for alcohol. We recommend everything in moderation: try starting with a small glass for a few days, listen to your body, and increase from there!
