Decoding the SCOBY and the Pellicle

To understand the magic of fermentation, we have to look at the SCOBY, which is an acronym for Symbiotic Culture of Bacteria and Yeasts.

As we often tell our customers, the true SCOBY is the living liquid itself. However, as this microscopic community of bacteria and yeast feeds on dissolved sugars and ferments the tea, it builds a dense, gelatinous biofilm on the surface. This protective mat is called the pellicle.

The pellicle acts as a living home and life-support system for the microbes. It floats gracefully at the top of the liquid brew, slowly growing in size and thickness. In fact, every time the brew is disturbed—whether by adding new sweet tea or simply moving the jar—the culture gets to work, forming a brand new layer on top of the brew.

Occasionally, you might find a miniature pellicle forming in your bottle of Blighty Booch. While it might surprise a first-time drinker, we absolutely love seeing it!
